Tomato-Sage Sauce (recipes)




Yield: Makes 8 (1/4-cup sevings)

Sage, a native Mediterranean herb, has been enjoyed for centuries for both its culinary and medicinal uses. The name is Latin (meaning "safe") and is a Reference to the healing powers once attributed to the herb.





Ingredients:



2cans (10 ounces each) no-salt-added whole tomatoes, undrained

1teaspoon olive oil

3cloves garlic, minced

1/4cup chopped fresh parsley

2tablespoons chopped fresh sage

2teaspoons sugar

1/4teaspoon black pepper









Preparation:





1.Place tomatoes in Food processor or blender; process until finely chopped. Set aside.2.Heat oil in medium saucepan over low heat. Add tomatoes, garlic, parsley, sage, sugar and black pepper. Cook over medium heat 30 minutes or until thickened.
