Toasted Coconut and Tropical Fruit Parfait (recipes)




Prep Time: 10 minutes

Yield: Makes 4 servings



Ingredients:



2tablespoons flaked sweetened coconut

1cup pineapple sherbet

1cup diced strawberries

3/4cup diced mango or peaches

1kiwi, peeled and diced









Preparation:





1.Heat small skillet over medium-high heat until hot. Add coconut; cook and stir 1 to 1-1/2 minutes or until golden, stirring constantly. Remove from heat; set aside.2.Spoon 1/4 cup sherbet into each of 4 parfait or Wine goblets. Top with mango, strawberries and kiwi. Sprinkle coconut over top.
