Ingredients



handful ice, plus extra to serve50ml/2fl oz gin, vodka or white rum25ml/1fl oz fresh lemon juice20ml/¾fl oz sugar syrup (often sold as gomme syrup)soda water, to top uplemon wedge, to garnish(Note: the addition of a free-range egg white at the shaking stage makes this drink a silver fizz; the addition of a whole free-range egg makes this a golden fizz.)



Method



1. Place the ice and 50ml/2fl oz of the spirit of your choice into a cocktail shaker. Add the lemon juice and sugar syrup and shake well.2. Strain into a highball glass half-filled with ice and top up with soda water.3. Garnish with a lemon wedge.
