Ingredients



4 lemon biscuits, crushed2 tbsp honey200ml/7fl oz double cream200g/7oz cream cheese2 tbsp icing sugar2 tsp lemon curd1 egg white55g/2oz sugarFor the toffee sauce110g/4oz caster sugar2 tbsp double cream



Method



1. Mix the biscuits and honey together in a bowl.2. Place the cream in a large bowl and use an electric whisk to whisk until thick. Stir in the cream cheese, icing sugar and lemon curd to combine.3. Spoon the biscuit mixture into a large chef' s ring. Spoon the cream mixture on top and smooth off the top using a palette knife. Carefully heat the ring using a blowtorch to allow easy removal.4. Place the egg white into a large clean bowl and whisk to form soft peaks. Add the sugar and whisk again to form stiff peaks.5. Spoon the meringue mixture over the cake.6. Using a blowtorch, carefully brown the meringue.7. To make the toffee sauce gently heat the sugar in a pan until dissolved and a caramel has formed.8. Stir in the cream to form a toffee sauce and remove from the heat.9. Drizzle the toffee sauce over the meringue and serve.
