Dirty Rice (recipes)


Dirty Rice

(serves 6)



Ingredients

1/4 pound beef liver, chopped

1/2 cup chopped chicken giblets

1/4 pound ground beef

1/4 pound ground pork

salt and pepper to taste

3 tablespoons corn oil

1 medium onion, chopped

1/2 cup diced bell pepper

2 cloves garlic, chopped

1/4 cup diced celery

1/2 cup water

4 cup cooked white rice

1/2 cup chopped parsley

1/2 cup chopped green onion tops



Directions

Cook liver and giblets in water to tender. Coat heavy skillet with additional corn oil. Season beef and pork with salt and pepper. Add to skillet; stir and cook until meat is done; drain fat. Add 3 tablespoons corn oil to skillet; add onion, bell pepper, garlic, and celery. Stir and cook until wilted. Add cooked meat. Stir in water; cover and simmer for 15 minutes. Add rice, parsley and green onion.
