Mac ' n Mornay

Yield: Makes 6 servings



Ingredients:



12ounces uncooked macaroni

Mornay Sauce (recipe follows)

Grated Romano cheese (optional)









Preparation:





1.Cook macaroni according to package directions; drain.2.Toss hot macaroni with warm Mornay Sauce. Sprinkle with additional Romano cheese, if desired.







Mornay Sauce

Yield: Makes 2 cups



Ingredients:



1/4cup plus 2 tablespoons butter

1/4cup plus 2 tablespoons all-purpose flour

1teaspoon salt

2cups milk, warmed

1/4cup plus 2 tablespoons grated Romano cheese

Dash ground nutmeg









Preparation:





1.Melt butter in 2-quart saucepan over medium heat. Add flour and salt; stir to blend. Add milk; stir to blend. Bring to a boil over high heat, stirring constantly.2.Reduce heat to low; simmer uncovered, 1 to 2 minutes until slightly thickened.3.Remove from heat. Stir in cheese and nutmeg.
