Ingredients



For the base 125g/4½oz unsalted butter60g/2¼oz caster sugar1 egg1 tsp vanilla extract185g/6½oz plain flour1 tsp Baking powder 60ml/2¼fl oz milk For the filling175g/6¼oz blackberry jam 250g/8¾oz blackberries For the topping 100g/3½oz unsalted butter 5 tbsp caster sugar 2 eggs225g/8oz desiccated coconut 60g/2¼oz plain flour



Method



1. Preheat the oven to 180C/350F/Gas 4. 2. To make the base, cream the butter and sugar in a bowl until light and fluffy. Add the eggs and vanilla extract and stir to combine. Sift the flour and Baking powder into the bowl and stir in with the milk. 3. Flour your hands and press the base evenly into a greased and lined 30x20cm/12x8in Baking tin. Spread the base evenly with jam and sprinkle with blackberries. 4. To make the topping, cream the butter and sugar in a bowl until light and fluffy. Add the egg and beat until combined. 5. Stir in the coconut and one tablespoon sifted flour, then stir in the remaining flour. Spread the topping evenly over the blackberries. 6. Bake the slice for 30 minutes, or until golden. Cover with foil and cook for another five minutes. Remove from the oven and allow to cool in the tin for ten minutes. Cut into rectangles.
