Ingredients



2 tsp sesame oil2 tsp soy sauce2 tsp clear honey1 sirloin steak, trimmed1 lime, juice only1 tbsp vegetable oil120g/4¼oz button mushrooms1½ red fresh red chillies1 potato, peeled and cut into matchsticks on a mandolinvegetable oil, for frying 2 handfuls of chervil2 handfuls of dill2 handfuls flat leaf parsley



Method



1. Preheat your deep-fat fryer to 190C/375F. If you don t have one, heat at least 5cm/2in of oil in a large wok or saucepan and use cubes of bread to test when the oil is hot enough. CAUTION: Do not leave hot oil unattended and never fill the pan more than one-third full of oil. 2. Preheat your chargrill pan over a medium high heat until it is smoking hot.3. Whisk together the sesame oil, soy and honey in a dish and sit the steak in this mixture for 5 minutes.4. Slice the half chilli finely. Heat a little oil in a frying pan and sauté the mushrooms with the sliced chilli and some salt and pepper until golden. 5. Deep fry the potato matchsticks with the whole chilli until crisp and golden. Drain on kitchen paper.6. Place the steak on to the chargrill and cook for 2-3 minutes on each side. Drizzle with the lime juice and set aside to rest. Slice into thin strips.7. Toss the herbs, mushrooms and potato together and pile into a serving dish. Scatter with the strips of beef and garnish with the fried chilli. Eat at once.
