Black Bean and Turkey Stew (recipes)
Yield: Makes 6 servings
Ingredients:
3cans (15 ounces each) black beans, rinsed and drained
1-1/2cups chopped onions
1-1/2cups fat-free reduced-sodium chicken broth
1cup sliced celery
1cup chopped red bell pepper
4cloves garlic, minced
1-1/2teaspoons dried oregano leaves
3/4teaspoon ground coriander
1/2teaspoon ground cumin
1/4teaspoon ground red pepper
6ounces cooked turkey sausage, thinly sliced
Preparation:
1.Combine all ingredients in slow cooker, except sausage. Cover; cook on LOW 6 to 8 hours.2.Transfer about 1-1/2 cups bean mixture from slow cooker to blender or food processor; purée bean mixture. Return to slow cooker. Stir in sausage. Cover; cook on LOW an additional 10 to 15 minutes.
