Ingredients
500g/1lb 2oz Bramley applessoft brown sugar, to taste3 tbsp Amaretto (optional)100g/3½oz ratafia biscuits2 eggs, 2 yolks and 1 white255g/9oz mascarpone55g/2oz caster sugar
Method
1. Peel and slice the apples, place in a saucepan with 1cm/1½in water and cook slowly until soft and mushy.2. Purée the apples and add soft brown sugar to taste.3. Place ratafias in a plastic bag and bash with a rolling pin to make fine crumbs.4. Whisk egg yolks and caster sugar until pale and fluffy. Gradually whisk in mascarpone and Amaretto until mixture is smooth.5. With clean beaters whisk egg white until soft peaks. Fold into the cream mixture.6. Now layer the mixture into a glass - a layer of apple, a layer of cream, a layer of ratafias ending with a layer of ratafias7. Place trifles in fridge for several hours before serving.
