Ingredients
150ml/5fl oz coconut milk150ml/5fl oz double cream3 slices of bread140g/5oz peanut butter30g/1oz butter2 tbsp caster sugar3 egg yolks, beaten
Method
1. Preheat the oven to 250C/500F/Gas 9.2. Place the coconut milk and cream in a medium saucepan and bring to the boil.3. Spread the bread with the peanut butter and cut into quarters.4. Butter a small casserole dish or pudding basin and arrange the quarters of peanut butter inside.5. Sprinkle the bread with sugar.6. Remove the saucepan from the heat and gently add it to the eggs, stirring all the while.7. Pour the resulting custard over the bread and transfer the dish to the oven.8. Bake pudding for 6-8 minutes, longer if the custard is still runny.9. Remove the pudding from the oven and serve hot.
