Broiled Shrimp Kabobs (recipes)

Yield: Makes 4 servings



Ingredients:



2tablespoons olive oil

2tablespoons lemon juice

1/2teaspoon bottled minced garlic

1/2teaspoon salt

1/2teaspoon dried oregano leaves

1/8teaspoon ground red pepper

1/2pound medium shrimp, peeled

1red bell pepper, cut into squares

1medium zucchini, cut into 1/2-inch slices









Preparation:





1.Preheat broiler. Whisk together oil, lemon juice, garlic, salt, oregano and ground red pepper in medium bowl. Add shrimp, bell pepper and zucchini; stir until well coated.2.Alternately thread shrimp, bell pepper and zucchini onto skewers. Place on rack of broiler pan. Broil 4 inches from heat 2 minutes per side or until shrimp turn pink and opaque.
