Ingredients
For the duck:2 duck breasts4 tsp clear honey1 tbsp soy sauceFor the rosti:350g/14oz Jersey new potatoes, washed and grated2 tbsp olive oilFor the salsa:1 mango, peeled, stoned and diced1 lime, juice only25g/1oz fresh coriander, chopped
Method
1. Preheat the oven to 220C/425F/Gas 7.2. In an ovenproof frying pan, gently heat the honey and soy sauce.3. Pan-fry the duck, skin side down until golden.4. Turn the duck and transfer the pan to the oven. Continue to cook for 8-10 minutes or until the duck is cooked through.5. In a small bowl, mix all the salsa ingredients together, put in a serving dish and set aside.6. Place the grated potato into a clean tea towel and squeeze out the excess water over a sink or bowl.7. In a small frying pan, heat half of the oil.8. Scatter half of the potato over the base of the pan. Fry until golden on both sides. 9. Remove and drain on kitchen paper.10. Repeat steps 6 and 7 with the remaining oil and potato.11. Serve the duck on the rosti with the salsa to the side.
