Chicken & Wild Rice Skillet Dinner (recipes)
Yield: Makes 1 serving
Ingredients:
1teaspoon reduced-fat margarine
2ounces boneless skinless chicken breast, cut into strips (about 1/2 chicken breast)
1package (5 ounces) long-grain and wild rice mix with seasoning
1/2cup water
3dried apricots, cut up
Preparation:
1.Melt margarine in small skillet over medium-high heat. Add chicken; cook and stir 3 to 5 minutes or until cooked through. 2.Meanwhile, measure 1/4 cup of the rice and 1 tablespoon plus 1/2 teaspoon of the seasoning mix. Reserve remaining rice and seasoning mix for another use. 3.Add rice, seasoning mix, water and apricots to skillet; mix well. Bring to a boil. Cover and reduce heat to low; simmer 25 minutes or until liquid is absorbed and rice is tender.
