Chicken Salad

Yield: Makes 4 servings



Ingredients:



1/4cup mayonnaise

1/4cup sour cream

1tablespoon lemon juice

1teaspoon sugar

1teaspoon grated lemon peel

1teaspoon Dijon mustard

1/2teaspoon salt

1/8to 1/4 teaspoon white pepper

2cups diced cooked chicken

1cup sliced celery

1/4cup sliced green onions

Lettuce leaves

Crumbled blue cheese (optional)









Preparation:





1.Combine mayonnaise, sour cream, lemon juice, sugar, lemon peel, mustard, salt and pepper in large bowl.2.Add chicken, celery and green onions; stir to combine. Cover; refrigerate at least 1 hour to allow flavors to blend.3.Serve salad on lettuce-lined plate. Sprinkle with blue cheese, if desired.

(serves 5-6)



Ingredients

2 pounds chicken, poached and cubed

1/4 cup celery chopped

1/4 cup green onion, chopped

1/2 cup mayonnaise

1/2 cup sour cream

1/2 cup red seedless grapes, halved

1/4 cup walnuts or pecans, rough chopped

salt and fresh ground pepper, to taste



Directions

In a mixing bowl, combine sour cream and mayonnaise. Add chicken, celery, onion, grapes and nuts; combine all ingredients until everything is coated with sour cream and mayonnaise mixture. Chill and serve on a bed of lettuce.
