Ingredients



1 roasted chicken leg, skinned and shredded2 iceberg lettuce leaves, shredded2 slices breadFor the mayonnaise:1 egg, yolk only½tsp dijon mustard1 tsp lemon juicevegetable oil1 tsp fresh tarragon, chopped freshly ground black pepper



Method



1. In a small bowl whisk together the egg yolk, mustard and lemon juice.2. Gradually whisk in enough oil until a thick mayonnaise consistency is formed.3. Stir in the tarragon and season with pepper.4. Spread the lemon tarragon mayonnaise on the bread.5. Top one piece of bread with the lettuce and chicken.6. Place the other piece of bread, mayonnaise side down over the top.7. Cut and serve.
