Ingredients



110g/4oz strawberries, hulled and halved1 tbsp pink champagne1 tbsp chopped fresh mint2 ready-made shortbread biscuits



Method



1. Place half of the strawberries into a small food processor with the champagne and blend to a purée. 2. Pour the purée into a bowl and place into the fridge to chill until cold.3. To serve, place the remaining sliced strawberries into the bowl of purée. Mix gently and pour into a serving bowl.4. Sprinkle over the chopped mint and garnish with the shortbread biscuits.
