Ingredients



2 free-range eggs100ml/3½fl oz whole milk60g/2¼oz caster sugar2 tsp ground cinnamon2 slices ready-made brioche1 apple20g/¾oz butter20ml/¾fl oz calvados



Method



1. In a large bowl, whisk together the eggs, the milk, half of the caster sugar and a pinch of the cinnamon.2. Soak the brioche in the egg mixture for a couple of minutes.3. Peel the apple, cut it into quarters and remove the core. Cut each quarter into three slices.4. In a mixing bowl, combine the remaining cinnamon with the remaining caster sugar and toss the apples in the mixture until they are well coated.5. Melt half the butter in a non-stick frying pan, add the apples and allow to brown over a medium to high heat. Turn and brown on the other side.6. In another large non-stick frying pan, melt the remaining butter. Carefully drain each slice of brioche and fry for about 2-3 minutes on each side, or until golden-brown.7. Drain the brioche on kitchen paper then arrange the slices on warm serving plates.8. Pour the calvados over the hot apples and carefully flame it by lighting a taper and holding the flame over the pan to ignite the vapours (do not add more alcohol if it fails to catch). Let the flames subside, then spoon the apples and the calvados sauce over the brioche and serve.
