Ingredients



1 tbsp soy sauce2 lemons, juice only1 orange, juice only1 red onion, peeled and finely diced2 tbsp olive oilsmall handful fresh coriander, chopped2 fillets John Dory



Method



1. Preheat the oven to 220C/425F/Gas 7.2. In a large bowl mix together the soy sauce, lemon juice, orange juice, red onion, olive oil and coriander.3. Add the John Dory fillets to the bowl and marinate for up to 10 minutes (or longer if time allows).4. Cut out two 38cm/15 inch squares of foil and fold the edges tightly together to form a secure parcel, leaving one side unsealed.5. Tip the mixture into the parcel and tightly seal.6. Place the parcel on a Baking try and bake in the oven for 7-8 minutes.7. Break open the parcel and serve.
