Ingredients
10 medium sized courgettes15g/½oz pine nuts toasted2 red chillies, de-seeded and finely chopped40g/1½oz parmesan Reggiano (whole pieces)2 lemons1 tsp flat leaf parsley2 cloves garlicvirgin olive oilsea salt and freshly ground black pepper
Method
1. Firstly cut the courgettes lengthways and place in a bowl. Drizzle with olive oil, season and mix to coat all slices.2. Place on a preheated BBQ and cook for 3-4 minutes on each side, until golden brown and cooked in the middle. Place into a dish and leave to one side.3. Whilst the courgettes are cooking, chop the chilli, parsley and garlic and place in a bowl with the pinenuts and enough olive oil to mix.4. Drizzle the dressing over the courgettes and shave the parmesan over the top. Serve immediately.
