Crème anglaise (recipes) and Zaria (sh)

Crème anglaise (recipes)

This is the French term for the traditional British custard sauce made with egg yolks, sugar and milk and/or cream and flavoured with vanilla. Proper Home-made custard is an absolute dream, but don' t cut corners or it just won' t be the same. The key to making custard is to heat it just enough to thicken, but not too much so that it curdles. A neat trick is to add a little cornflour which will help stabilise the eggs.Real proper custard

Zaria (sh)

formerly Zazzau

Historic kingdom and traditional emirate, northern Nigeria.

It was founded in the 11th century and was the southernmost of the original seven Hausa Bakwai states. Islam was introduced §ã 1456, and there were Muslim Hausa rulers in the early 16th century. A Songhai warrior conquered Zazzau §ã 1512. By the end of the century it was renamed Zaria and was in decline. It became a tributary state (§ã 1734-1804) of the Bornu kingdom. In 1804 it came under the Fulani Muslims. The Zaria emirate was created in 1835. It remains one of Nigeria's largest traditional emirates, and it is one of the nation's leading producers of cotton for export.
