Ingredients



100g/3 ½ oz polenta225g/8oz cherry tomatoes3 tbsp olive oilTo garnish1 small bunch fresh chives, finely chopped



Method



1. Sprinkle the polenta onto a flat baking sheet. Slice off the base of each of the cherry tomatoes and discard the ends. Roll the tomatoes in the polenta, making sure the bases are coated. 2. Heat the oil in a frying pan. Fry the tomatoes for 4-5 minutes or until golden-brown. To serve, arrange on a plate and garnish with the chives.
