Ingredients



3 slices of bread, crusts removed2 tbsp fresh coriander2 tbsp fresh flatleaf parsley1 lemon, juice onlyolive oil1 salmon fillet2 tsp Dijon mustardreserved couscous



Method



1. Preheat oven to 250C/500F/Gas 9.2. Place the bread, herbs and lemon juice in the Food processor and blend to form breadcrumbs.3. As the processor is moving pour in a little olive oil (not too much otherwise the breadcrumbs will clump together).4. Spread the salmon with the mustard and then pat the herb breadcrumb mixture on top.5. Bake fish in oven for ten minutes.6. Prepare the couscous by spooning it into a small cup or mug.7. Gently tip the cup upside down onto a plate to form a small mound.8. Remove fish from oven and slide onto plate with couscous before serving.
