Ingredients



4 brined crubeens (pigs trotters)2 carrots1 stick celery1 onion175ml/6fl oz wine vinegarmelted butterdried breadcrumbspinch allspice



Method



1. Bandage the trotters in pairs on to splints so that they keep their shape while cooking.2. Put in a pot with the vegetables and cover with water and the vinegar. Simmer for 6 or 7 hours.3. Allow to cool in the liquid.4. To serve, split the trotters in two and roll in melted butter and dried breadcrumbs mixed with a pinch of allspice. Heat slowly under a grill, or in the oven at 180C/350F/Gas 4, until hot and crisp on the outside.
