Curried Sweet Potato Soup (recipes)

Ingredients



1 large sweet potato, peeled and cubed2 tsp medium curry powder a pinch of crushed dried chilli flakes1 bay leaf1 tbsp vegetable oil1 leek, white end thinly sliced1 garlic clove, peeled and crushed120ml/4fl oz white wine290ml/½ pint vegetable stock½ lime, juice only2 tsp chopped flat-leaf parsley2 tsp chopped fresh coriandersalt and freshly ground black peppersesame oil, for serving



Method



1. In a large saucepan, heat the olive oil.2. Sauté the leek for 1-2 minutes, to soften.3. Stir the garlic, curry powder, chilli flakes, bay leaf and potato into the leek for 2-3 minutes until the potato is well coated in the oil and spices.4. Pour in the wine and bring to the boil, for 2 minutes.5. Add the stock and bring back to the boil.6. Reduce the heat and simmer gently for 12-15 minutes or until the potatoes are tender. Season.7. Fold in the lime juice and herbs.8. Serve with a drizzle of sesame oil.
