Curried mussel and fennel soup (recipes)

Ingredients



200g/7oz mussels, cleaned290ml/10fl oz white wine5 sprigs of fresh thyme1 tbsp olive oil2 garlic cloves, peeled and chopped½ fennel, diced1 tsp turmeric1 tsp ground coriander120ml/4fl oz double cream2 tbsp fresh dill, chopped



Method



1. Place the mussels in a medium saucepan.2. Pour the wine into the pan and add the thyme.3. Place a lid over the pan and steam the mussels, over a high heat for five minutes, or until their shells have opened.4. Retain the mussels and strain and keep the cooking juices.5. Heat the olive oil in a medium saucepan.6. Add the garlic, fennel, turmeric and coriander and sauté for two minutes.7. Add the strained cooking juices.8. Leave broth to simmer for three minutes.9. Pour in the cream and simmer for a further two minutes.10. Remove mussels from shells, discarding any mussels which have not opened.11. Remove the broth from the heat and ladle into bowls. Add the reserved mussels.12. Serve soup with griddled bread spread with pesto.
