Easy Halibut Steaks with Tomato and Broccoli Sauce (recipes)




Yield: Makes 4 servings



Ingredients:



2tablespoons olive oil

2cups chopped fresh broccoli

2-1/2cups diced fresh tomatoes

2tablespoons lemon juice

1tablespoon chopped garlic

1tablespoon fresh tarragon or 1 teaspoon dried tarragon

1/2teaspoon sugar

1/2teaspoon salt

1/2teaspoon black pepper

4halibut steaks (4 ounces each)









Preparation:





1.Heat oil in large skillet over medium heat 1 minute. Add broccoli; cook 5 minutes. Add remaining ingredients except halibut; cook 5 minutes, stirring occasionally. Add halibut, cover and cook 5 minutes on each side.
