Ingredients



4 Cantucci biscuits2 tbsp Greek yoghurt110g/4oz cream cheese55g/2oz almonds2 tbsp double creamFor the coulis110g/4oz frozen raspberries2 tbsp icing sugar



Method



1. Place the biscuits into a mini-food processor and blend until the mixture resembles fine breadcrumbs.2. Place the yoghurt, cream cheese, almonds and cream together in a large bowl and mix together until combined. 3. Stir in the biscuits and mix until smooth then spoon the mixture into a tall serving glass.4. To make the coulis, place the raspberries and icing sugar into a mini-food processor and blend until smooth.5. Pour the coulis over the dessert and serve.
