Fiesta Corn Salad (recipes)


Fiesta Corn Salad

Yield: Makes 4 to 6 servings



Ingredients:



5large ears fresh corn

Fiesta Dressing (recipe follows)

1-1/2cups shredded red cabbage

1large tomato, chopped

1medium green bell pepper, seeded and chopped

5slices bacon, cooked and crumbled (optional)

1cup coarsely crushed tortilla chips

1cup shredded Cheddar cheese









Preparation:





1.Remove husks and silk from corn. Place in boiling water; cover. Cook 6 minutes or until tender; drain. Cool. Meanwhile prepare Fiesta Dressing. Cut corn from cob using sharp knife. Combine corn, cabbage, tomato and pepper in large bowl. Pour dressing over Vegetables; mix lightly. Cover; refrigerate. Stir in bacon just before serving, if desired. Spoon salad into large bowl; sprinkle with chips and cheese.







Fiesta Dressing

Yield: Makes 1 cup



Ingredients:



1cup (8 ounces) plain yogurt

3tablespoons minced onion

1-1/2tablespoons fresh lime juice

1clove garlic, minced

1teaspoon ground cumin

1teaspoon chili powder

1/4teaspoon salt









Preparation:





1.Combine ingredients in small bowl; mix well.
