Ingredients



20g/¾oz dried morels100g/4oz fresh wild mushrooms (chanterelles, girolles or whatever variety is available)1 x 1.5kg/3-3½lb free-range chicken30g/1¼oz unsalted buttersalt and freshly ground white pepper300ml/10fl oz dry sherry300ml/10fl oz double cream



Method



1. Wash the dried mushrooms very well in plenty of water, then cover with clean cold water and leave them to soak for about 3 hours. Drain well, but keep their soaking water. Wash, dry and slice the fresh wild mushrooms.2. Cut the chicken into 10 pieces: 2 legs, 2 thighs, 2 breasts (each cut in half) and 2 wings. Your butcher should do this for you. The meat should remain on the bone. (The carcass and the wings can be used in a chicken stock or soup).3. In a thick cast-iron saucepan large enough to hold all the chicken pieces in one layer, heat the butter on a medium heat until a rich golden colour and foamy. Add the chicken and cook for about 5 minutes to lightly brown. Season. Add the rehydrated morels and sweat for 2-3 minutes, stirring from time to time. Spoon out the fat. Add the dry sherry and bring to the boil. Reduce the heat and simmer until reduced by half. Add the water the morels soaked in, then the cream. Simmer for about 15 minutes until the sauce is thick and creamy. Check that the chicken is cooked.4. Add the fresh wild mushrooms to the casserole towards the end of cooking, and cook for 5 minutes. Serve to your guests.
