Ingredients



140g/5oz mozzarella, sliced3 tbsp plain flour, seasoned 2 eggs, beaten110g/4oz polenta2 tbsp olive oilFor the dressing2 spring onions, finely chopped1 tbsp balsamic vinegar2 tbsp olive oilsalt and freshly ground black pepper



Method



1. Coat the mozzarella slices in the flour, dip in the egg and then coat in the polenta.2. Heat the oil in a medium non-stick frying pan until very hot.3. Fry the mozzarella slices in the hot oil for approximately 1-2 minutes on each side until the polenta is crunchy and the mozzarella is oozing inside.4. To make the dressing, place the spring onions, balsamic vinegar, olive oil and seasoning into a bowl and mix together.5. To serve, place the mozzarella slices onto a serving plate and drizzle the dressing around.
