Ingredients



255g/9oz shortcrust pastry4 tsp cranberry sauce 85g/3oz firm goats' cheese, sliced30g/1oz walnut pieces2 eggs200ml/7fl oz crème fraîchesalt and freshly ground black pepper2 tbsp snipped fresh chives



Method



1. Roll out the pastry on a lightly floured surface and use to line four 9cm/3½in individual flan tins. Place the tins on a baking sheet and chill for 30 minutes.2. Preheat the oven to 190C/375F/Gas 5.3. Spread 1 tsp cranberry sauce over the base of each pastry case. Top with slices of cheese and the walnut pieces.4. Beat together the eggs, crème fraîche, seasoning and chives and pour into the pastry cases.5. Bake for 25-30 minutes until the pastry is golden and the filling set and serve warm.
