Green Beans with Blue Cheese and Roasted Peppers

Yield: Makes 4 servings



Ingredients:



1bag (20 ounces) frozen cut green beans

1/2jar (about 3 ounces) roasted red pepper strips, drained and slivered

1/8teaspoon salt

1/8teaspoon white pepper

4ounces cream cheese

1/2cup milk

3/4cup blue cheese (3 ounces), crumbled

1/2cup Italian-style bread crumbs

1tablespoon butter, melted









Preparation:





1.Preheat oven to 350°F. Spray 2-quart oval casserole with nonstick cooking spray. Combine green beans, red pepper strips, salt and pepper in prepared dish.2.Place cream cheese and milk in small saucepan; heat over low heat, stirring until melted. Add blue cheese; stir only until combined. Pour cheese mixture over green bean mixture; stir until green beans are coated.3.Combine bread crumbs and butter in small bowl; sprinkle evenly over casserole. , uncovered, 20 minutes or until hot and bubbly.
