Ingredients



1 large all-butter croissant, halved widthways2 tbsp icing sugar, sieved140g/5oz strawberries, hulled and sliced1 orange, zest only1 tsp chopped fresh mint1fl oz dark rumextra icing sugar, for dusting



Method



1. In a medium bowl mix together orange zest, mint and rum.2. Fold in the strawberry slices until well coated in the mixture. Set aside to macerate. 3. Place a griddle pan on the heat.4. Dust the cut side of each croissant slice with the icing sugar.5. Griddle the croissant slices, icing sugar side down until charred.6. Serve the macerated strawberries on the charred croissant and dust with icing sugar.
