Ham Meat Loaf with Horseradish Sauce (recipes)




Cook Time: 4 to 4-1/2 hours

Prep Time: 20 minutes

Yield: Makes 8 servings



Ingredients:



1-1/2pounds meat loaf mix* or ground beef

1/2pound cooked ham, finely chopped

1cup plain dry bread crumbs

1cup finely chopped onion

2eggs, lightly beaten

1/2cup chili sauce or ketchup

1teaspoon plus 1/8 teaspoon salt, divided

1/2teaspoon caraway seeds

1/4teaspoon black pepper

1/2cup sour cream

3tablespoons thinly sliced green onions

1tablespoon prepared horseradish

1tablespoon spicy brown or coarse-grained mustard









Preparation:





1.Combine meat loaf mix, ham, bread crumbs, onion, eggs, chili sauce, 1 teaspoon salt, caraway seeds and pepper in large bowl; mix well. Shape meat mixture into 7-inch round loaf. 2.Prepare foil handles for slow cooker (see below). Place meat loaf on top of foil strips. Using strips, place meat loaf into slow cooker. Cover; cook on LOW 4 to 4-1/2 hours or until meat thermometer inserted into center of meat loaf reads 165°F. Use foil strips to remove meat loaf from slow cooker. Let stand 5 minutes. 3.Meanwhile, combine sour cream, green onions, horseradish, mustard and remaining 1/8 teaspoon salt in small bowl; mix well. Cut meat loaf into wedges; serve with horseradish sauce.







Foil Handles:

Tear off three 18x2-inch strips of heavy foil or use regular foil folded to double thickness. Crisscross foil strips in spoke design.
