Italian Sausage and Vegetable Stew

Prep and Cook Time: 30 minutes

Yield: Makes 6 servings



Ingredients:



1pound hot or mild Italian sausage links, cut into 1-inch pieces

1package (16 ounces) frozen vegetable blend, such as onions and green, red and yellow bell peppers

2medium zucchini, sliced

1can (14-1/2 ounces) diced Italian-style tomatoes, undrained

1jar (4-1/2 ounces) sliced mushrooms, drained

4cloves garlic, minced









Preparation:





1.Cook sausage in large saucepan, covered, over medium to medium-high heat 5 minutes or until browned; pour off drippings.2.Add frozen vegetables, zucchini, tomatoes with juice, mushrooms and garlic; bring to a boil. Reduce heat and simmer, covered, 10 minutes. Cook uncovered 5 to 10 minutes or until thickened slightly.







Serving Suggestion:

Serve with garlic bread.
