Kirsch-Flamed Plums with Vanilla Mascapone (recipes)

Ingredients



1 tbsp unsalted butter1 tbsp soft dark brown sugar¼ vanilla pod1 plum, stoned and sliced thinly 110g/4oz blackberries2 tbsp kirsch125g/4oz vanilla mascapone (see separate recipe, halved)



Method



1. In a small frying pan melt the butter.2. Stir in the sugar and vanilla pod and cook for a further minute.3. Add the fruit and gently fry for 4-5 minutes or until the fruit softens.4. Flambé with half the kirsch.5. Pour in the remaining kirsch.6. Serve with vanilla mascapone.
