Lemoned Shrimp with Basil (recipes)
Lemoned Shrimp with Basil
Yield: Makes 4 servings
Ingredients:
1pound raw medium shrimp, peeled and deveined
4cloves garlic, minced
1teaspoon grated lemon peel
1/4teaspoon seafood seasoning mix
1/4teaspoon dried red pepper flakes
2tablespoons diet margarine
2tablespoons lemon juice
2tablespoons chopped fresh basil
Preparation:
1.Place a 12-inch nonstick skillet over medium heat until hot. Coat skillet with cooking spray. Add shrimp, garlic, lemon rind, seafood seasoning and red pepper flakes. Cook 4 minutes or until shrimp are opaque in center, stirring frequently.2.Remove from heat; add remaining ingredients. Serve in individual baking dishes or ramekins.
Serving Suggestion:
Serve with cooked rice and steamed asparagus spears, if it fits into your meal plan.
