Lobster Tails with Tasty Butters (recipes)


Lobster Tail with Tasty Butters

Yield: Makes 4 servings



Ingredients:



Hot & Spicy Butter, Scallion Butter or Chili-Mustard Butter (recipes follow)

4fresh or thawed frozen lobster tails (about 5 ounces each)









Preparation:





1.Prepare grill for direct cooking. Prepare choice of butter mixtures.2.Rinse lobster tails in cold water. Butterfly tails by cutting lengthwise through centers of hard top shells and meat. Cut to, but not through, bottoms of shells. Press shell halves of tails apart with fingers. Brush lobster meat with butter mixture.3.Place tails on grid, meat side down. Grill, uncovered, over medium-high heat 4 minutes. Turn tails meat side up. Brush with butter mixture; grill 4 to 5 minutes or until lobster meat turns opaque.4.Heat remaining butter mixture, stirring occasionally. Serve butter mixture for dipping.

1tablespoon chopped onion

2to 3 teaspoons hot pepper sauce

1teaspoon dried thyme leaves

1/4teaspoon ground allspice

1/3cup butter or margarine, melted

1tablespoon finely chopped green onion tops

1tablespoon lemon juice

1teaspoon grated lemon peel

1/4teaspoon black pepper

1/3cup butter or margarine, melted

1tablespoon chopped onion

1tablespoon Dijon mustard

1teaspoon chili powder









Preparation:





1.For each butter sauce, combine ingredients in small bowl.
