Ingredients



110g/4oz polenta500ml/17fl oz boiled water½ small red onion, finely sliced4 vine plum tomatoes, quartered2 tbsp chopped mixed fresh herbs e.g. flatleaf parsley, mint, chives, chervil, basil1 tbsp olive oilsalt and freshly ground black pepper



Method



1. Place the polenta and water in a medium pan over a medium heat.2. Cook the polenta for 1 minute.3. Fold in the remaining ingredients, then serve.
