Moist Pumpkin Cookies (recipes)
Yield: Makes about 3-1/2 dozen cookies
Ingredients:
1/2cup butter, softened
1cup packed brown sugar
1/2cup granulated sugar
1-1/2cups solid-pack pumpkin (not pumpkin pie filling)
1egg
1teaspoon vanilla
2-1/4cups all-purpose flour
1-1/4teaspoons ground cinnamon
1teaspoon baking powder
1/2teaspoon baking soda
1/2teaspoon salt
1/2teaspoon ground nutmeg
3/4cup raisins
1/2cup chopped walnuts
Powdered Sugar Glaze (recipe follows)
Preparation:
1.Preheat oven to 350°F. Beat butter and sugars in large bowl until creamy. Beat in pumpkin, egg and vanilla until light and fluffy. Mix in flour, cinnamon, baking powder, baking soda, salt and nutmeg until blended. Stir in raisins and walnuts. Drop heaping tablespoonfuls of dough 2 inches apart onto ungreased cookie sheets.2.Bake 12 to 15 minutes or until set. Cool 2 minutes on cookie sheets. Remove to wire racks; cool completely. Prepare Powdered Sugar Glaze. Drizzle glaze over cookies. Let glaze set. Store between layers of waxed paper in airtight containers.
Powdered Sugar Glaze:
Combine 1 cup powdered sugar and 2 tablespoons milk in small bowl until well blended.
