Pan Seared Halibut Steaks with Avocado Salsa (recipes)
Yield: Makes 4 servings
Ingredients:
4tablespoons chipotle salsa, divided
1/2teaspoon salt, divided
4small (4 to 5 ounces) or 2 large (8 to 10 ounces) halibut steaks, cut 3/4 inch thick
1/2cup diced tomato
1/2ripe avocado, diced
2tablespoons chopped cilantro (optional)
Lime wedges (optional)
Preparation:
1.Combine 2 tablespoons salsa and 1/4 teaspoon salt; spread over both sides of halibut.2.Heat large nonstick skillet over medium heat until hot. Add halibut; cook 4 to 5 minutes per side or until fish is opaque in center.3.Meanwhile, combine remaining 2 tablespoons salsa, 1/4 teaspoon salt, tomato, avocado and cilantro, if desired, in small bowl. Mix well and spoon over cooked fish. Garnish with lime wedges, if desired.
