Ingredients
2 tbsp caster sugar1 tbsp unsalted butter and extra for greasing3 large eggs, separated1 tbsp plain flour1 tbsp cornflour1 papaya, peeled, deseeded and finely diced1 lime, zest and juicevanilla extract, a few drops
Method
1. Preheat the oven to 220C/425F/Gas 7.2. Grease 2 ramekin dishes with butter.3. In a small saucepan, whisk together 1 tbsp of caster sugar with the butter, egg yolks, flour and cornflour over a low heat for 2 minutes.4. In a medium grease-free mixing bowl, whisk the egg whites with 1 tsp of the caster sugar until it forms stiff peaks.5. Stir half each of the papaya, lime zest and juice into the egg yolk mixture with the vanilla extract, then fold in the stiff egg whites.6. Divide the mixture between the two ramekin dishes and bake for 7-8 minutes or until cooked through, risen and golden.7. In a small bowl, mix the remaining papaya, lime zest, juice and caster sugar. Set aside.8. Serve the soufflès with the sweet papaya salsa.
