Peanut Butter Cereal Bars (recipes)




Yield: Makes 40 servings



Ingredients:



3cups miniature marshmallows

3tablespoons butter or margarine

1/2cup reduced-fat peanut butter

3-1/2cups crisp rice cereal

1cup uncooked quick oats

1/3cup mini semisweet chocolate chips









Preparation:





1.Lightly coat 13X9-inch baking pan with nonstick cooking spray; set aside.2.Combine marshmallows and margarine in large microwavable bowl. Microwave on HIGH 15 seconds; stir. Continue to microwave 1 minute; stir until marshmallows are melted and mixture is smooth. Add peanut butter; stir. Add cereal and oats; stir until well coated. Spread into prepared pan. Immediately sprinkle chocolate chips on top; lightly press.3.Cool completely in pan. Cut into 40 bars.







Tip:

To make spreading the cereal mixture easier and cleanup a snap, lightly spray your spoon with nonstick cooking spray before stirring these bars.
