Ravioli with Tomato Pesto (recipes)


Ravioli with Tomato Pesto

Yield: Makes 2 servings



Ingredients:



4ounces frozen cheese ravioli

1-1/4cups coarsely chopped plum tomatoes

1/4cup fresh basil leaves

2teaspoons pine nuts

2teaspoons olive oil

1/4teaspoon salt

1/8teaspoon black pepper

1tablespoon grated Parmesan cheese









Preparation:





1.Cook ravioli according to package directions; drain.2.Meanwhile, combine tomatoes, basil, pine nuts, oil, salt and pepper in food processor. Process using on/off pulses just until ingredients are chopped. Serve sauce over hot cooked ravioli. Top with cheese.
