Method
1. Preheat the oven to 230C/450F/Gas 8.2. Place the whole plantains in their skins on a baking tray and put them in the hot oven for about 20-25 minutes. The plantains are ready when the skins are black and they are soft.3. Remove the plantains from the oven and leave to cool.4. Split the plantains open and grate the fresh ginger on top to serve.
