Ingredients
1 red onion, peeled and diced6 garlic gloves, peeled and dicedolive oil150ml/5fl oz water12 plum tomatoes quartered1 x 800g/1¾oz tin plum tomatoessalt and freshly ground black pepperhalf loaf of French bread1 x 15g/½ packet fresh basil
Method
1. Heat about 3 tbsp of olive oil in a pan and cook the onion and garlic for a few minutes to soften them slightly. 2. Add the water and all the tomatoes. Cover with a lid, bring to the boil and season with salt and lots of pepper. 3. Dice the bread and stir it into the soup, along with the freshly ripped basil leaves. Place in a bowl, and drizzle with olive oil on the top.
