Ingredients



For the pizza: 225g/8oz flour2 eggs125g/4oz lard1 cupful sugara pinch Baking powderadd enough cold water to produce a soft pasteFor the filling:25g/1oz butter2 tbsp flour570ml/1 pint milk2 egg yolks80g/3oz each grated parmesan and white cream cheese125g/4oz Bel Paese, cut in dice80g/3oz each cooked ham and salami sausage2 hard-boiled eggs, choppeda handful of sultanaswhites of 2 eggssalt and peppernutmeg



Method



1. Make a pastry with the following ingredients, adding enough cold water to produce a soft paste: 225g/8oz flour, 2 eggs, 125g/4oz of lard, 1 cupful of sugar, a pinch of Baking powder. 2. For the filling of the pizza make a bechamel sauce with 25g/1oz of butter, 30g/2 tbsp of flour, 570ml/1 pintmilk. When the bechamel is cooked stir in the yolks of 2 eggs, 80g/3oz each of grated parmesan and white cream cheese, 125g/4oz Bel Paese cut in dice, 80g/3oz each of cooked ham and salami sausage, and 2 hard-boiled eggs, all cut in small pieces, and a handful of sultanas. 3. Season with salt, pepper, and nutmeg, and fold in the beaten whites of the 2 eggs.4. Line a tart tin with the pastry, fill with the prepared mixture, cover with a lid of pastry, and bake in a moderate oven for 30 minutes. A hefty dish, this rustic pizza.
