Salmon Rissoles (recipes)








Makes 5 small rissoles

Ingredients



1 X 213g/7½oz tin red salmon1 tbsp spring onion, chopped 2 tbsp tomato ketchup1 slice bread made into breadcrumbs 2 tbsp vegetable oil, for frying



Method



1. Flake the salmon, checking carefully to make sure there are no bones.2. In a mixing bowl combine the salmon, spring onion, ketchup and 1 tbsp of the breadcrumbs.3. Form into small, sausage shaped rissoles and coat in breadcrumbs.4. Heat the oil in a frying pan and sauté the rissoles for about 2 minutes on each side or until golden.
