Ingredients
450g/1lb squid2 garlic cloves, finely chopped25ml/1fl oz olive oila pinch of crushed dried chilli1 tbsp fresh parsley, roughly choppedjuice of ¼ lemonsalt and freshly ground black pepperlemon wedges, to serve
Method
1. Clean the squid and cut the body section into rings.2. Quickly fry the garlic in hot olive oil and add the squid just as the garlic is beginning to brown. Add the seasoning and a pinch of chilli. Turn over and saute for 2-3 minutes. Add the parsley and lemon juice. Serve with more lemon wedges and chips.
